At the year end Enliven Wellness Works gathering, team member brought a deliciously healthy cookie we all raved about!
Giving credit where due, we would like to thank Peggy Kotsopoulos for her fabulous recipe in “Must Have Been Something I Ate“. According to our team, the cookie is a must.
Chocolate Chip Quinoa Cookies
Ingredients:
- 1 cup cooked quinoa
- 1 cup uncooked oatmeal flakes
- 1 cup unsweetened, shredded coconut
- 2 tablespoons almond butter
- 4 large very ripe bananas
- ½ cup coconut sugar
- 1 teaspoon vanilla
- ½ cup chocolate chips
- A hint of sea salt
Preparation
Pre-heat oven to 375 degrees. In a large mixing bowl, mash bananas with fork. Next add vanilla, almond butter and coconut sugar. After well mixed, begin to add quinoa, oatmeal flakes, coconut and salt. Again mixing well, stir in chocolate chips.
Line baking sheet with parchment paper, use a non-stick sheet, or lightly grease with coconut oil to prevent sticking. Using a regular teaspoon, scoop rounded amounts out of bowl and drop onto cooking sheet. Bake for 25-30 minutes. Remove from oven and let cool.
